Funfetti Cake
Wishing a happy new year to everyone! It's a brand new year - a year for new beginnings. I'm pretty sure that most of us made a resolution to "eat healthy"...but why don't we start that from tomorrow? For now, let's bake a cake to celebrate the start of a new chapter? (Yea I know I shouldn't encourage eating unhealthy...but what can I say - BIG TIME SWEET TOOTH HERE!)☺︎

Ingredients:
Cake
• 1 1/2 cups buttermilk
• 2 tsp vanilla extract
• 1/2 cup oil
• 4 cups flour
• 2 tsp baking powder
• 1 1/2 tsp salt
• 1 tsp baking soda
• 2 cups sugar
• 1/2 cup brown sugar
• 1 cup butter (225g)
• 4 eggs
• 4 egg yolks
Cream cheese frosting
• 2 cups butter (460g)
• 455g cream cheese
• 3 cups powdered sugar
• Pinch of salt
Method:
- In a small bowl, combine buttermilk, vanilla extract and oil and set it aside.
- In another bowl, whisk together flour, baking powder, salt and baking soda. Set it aside.
- In a large mixing bowl, combine sugar, brown sugar and butter with an electric mixer until it is soft and fluffy.
- Add the egg and egg yolks one at a time and incorporate it evenly. Beat until the batter has doubled in volume and is super light.
- Gently beat in a third of the flour mixture and add half the buttermilk mixture. Alternate it until everything is evenly mixed with no lumps.
- Fold the sprinkles into the batter.
- Preheat the oven to 180°C.
- Bake the cake for 30 mins and maintain heat control by changing oven temperature so that the cake bakes evenly.
- Once the cakes are golden brown take it out from the oven and let them cool down completely.
While the cake is baking you can turn your attention towards the frosting.
- In a large bowl, beat the butter, cream cheese and salt using an electric mixer. Mix until it is light and fluffy.
- Add the powdered sugar and beat until it is incorporated evenly and there are no lumps.
And we're done! Now we just have to assemble it. Now in most recipes, people would have stacked the cake like how you get in bakeries. But I like to keep it simple - so you can just spread a layer of cream cheese frosting on the top of the cake once it's completely cooled and decorate it however you like!
Notes:
‣ About the temperature control - some ovens have hot spots. When a lot of heat is concentrated in just one spot, the top layer starts burning but the inside is still not baked. So you should check the oven from time to time, reduce the temperature and bake for longer for good results instead of baking at a high temperature for a short period of time. Remember, patience is key!
‣ If you feel that the cream cheese is too overpowering, you can add a drop of vanilla extract to balance the flavour.
‣ In my personal opinion, powdered sugar is way too sweet - so I tend to use normal sugar to make frosting. It's just a matter of how big a sweet tooth you have!
